Happy Cinco de Mayo friends! I love any excuse to drink margaritas and eat Mexican food (which let’s face it, I do on a daily basis anyway). Since quarantine has started, I’ve become quite fascinated with bartending. I love creating cocktails and following recipes for delicious drinks.
I don’t remember the first time that I tried mezcal but the minute I did, I fell in love. The unique smoky flavor is very different than other spirits but it works oh-so-well with fruity and floral flavors. When we finally pulled the trigger on getting a bottle for our bar cart, we had no idea what kind of cocktail we were going to make. I just knew that I wanted it to have pineapple juice.
And so one day we just threw together a few ingredients together and low and behold, we had made a pineapple mezcal mule!
With mezcal, ginger beer, lime juice, and a splash of pineapple juice, this cocktail is perfect for Cinco de Mayo as well as warm summer nights when you’re feeling a little spicy!
- 4 ounces ginger beer
- 1/2 ounce lime juice (freshly squeezed is always ideal)
- 2 ounces Mezcal
- splash of pineapple juice
- 1-2 mint leaves for garnish
Combine all ingredients in a copper mug (or whichever cocktail glass you prefer to use) with ice. Garnish with 1-2 mint leaves or lime wheel.
And that’s it! This super simple cocktail will quickly become a summer staple. Try it out and let me know what you think!
